3 cup  cooked chicken breast, diced
1 cup  Apples, fresh, chopped
0 1/2 cup  fresh chopped celery
2 each  fresh green onions
0 1/2 cup  chopped walnuts
3 tbsp  balsamic vinegar
5 tbsp  olive oil
1 pinch  salt and pepper
Directions
  1. In a large bowl, toss together the chicken, apple, celery, onion, and walnuts.
  2. In a small bowl, whisk together the vinegar and oil and pour over the chicken mixture.
  3. Season with salt and pepper to taste and mix well.
  4. Let rest 10 to 15 minutes, mix again and chill.
  5. Serve on a bed of lettuce.
