Hot Sauce
1 cup  fresh chopped onion
1 each  chopped green bell peppers
1 each  Chile Peppers, green, whole
5 each  medium garlic cloves
4 cup  fresh chopped onion
28 oz  Tomatoes, dices, canned
1 tsp  ground cumin
1 tsp  ground coriander
0 1/2 tsp  ground oregano
2 tbsp  fresh cilantro
1 pinch  salt
  1. In a blender or food processor, combine the onions, peppers, chiles, garlic, tomatoes, cumin, coriander, oregano, and cilantro and puree until smooth.
  2. Transfer the sauce to a soup pot and simmer on low heat, uncovered, for about 30 minutes, or until the sauce has thickened and the flavors have mellowed.
  3. Stir often as it cooks to prevent sticking. Add salt to taste.
