3 cup  sliced white onion
1 1/2 cup  chopped leeks
0 1/2 cup  shallots, chopped
1 tbsp  margarine
1 tsp  sugar
4 floz  fresh mushroom slices
6 1/2 cup  vegetable broth
1 cup  salt and pepper
Directions
  1. Slice onions and leeks, and chop shallots.
  2. Cook them in the 1 tbsp margarine in a large saucepan over medium heat, lid on for 15 minutes.
  3. Add sugar and uncover the pan. Continue cooking 10 minutes longer, or the mixture turns golden in hue.
  4. Stir in mushrooms and cook for another 5 minutes, or until they are tender.
  5. Add stock and bring to a boil.
  6. Simmer, uncovered, for 15 minutes.
  7. Season with salt and pepper
