12 oz  firm tofu
1 each  cooking spray
0 1/4 cup  red curry paste
3 tbsp  low sodium soy sauce
  1. Press tofu between two plates for at least 30 minutes.
  2. Preheat oven to 350°F.
  3. Coat 8" x 12" inch baking dish with cooking spray.
  4. Cut each tofu cake into three slices, each 1/2" thick.
  5. Stack slices and cut diagonally through all three layers to create 12 triangular pieces from each block of tofu.
  6. In baking dish, gently toss tofu with curry paste and soy sauce.
  7. Bake 45 minutes, gently stirring twice.
