2 each  medium garlic cloves
2 tbsp  fresh lemon juice
0 1/4 cup  chopped parsley
0 1/2 cup  chopped scallions
2 oz  fresh mint
0 1/2 tsp  ground thyme
1 pinch  salt
0 1/4 tsp  black pepper
1 1/2 lb  sliced zucchini
1 each  medium tomatoes
Directions
  1. Preheat oven broiler.
  2. In large bowl, whisk together olive oil, garlic, lemon juice, parsley, scallions, mint, thyme, salt, and pepper.
  3. Toss zucchini and tomatoes in mixture until evenly coated. Place vegetables on baking sheet and broil 8 - 10 minutes, until zucchini is just tender. Serve immediately.
