6 cup  low sodium vegetable broth
1 tbsp  fresh ginger root
2 cups  Greens, watercress, fresh, sprig
1 pinch  salt
1 pinch  black pepper
2 each  fresh green onions
2 tbsp  shredded carrots
  1. In large pot, combine broth and ginger root and bring to boil over medium-high.
  2. Lower heat, cover, and let simmer 5 minutes.
  3. Using slotted spoon, remove ginger root and discard.
  4. Trim stems from watercress.
  5. Mix into soup and let simmer 10 to 15 minutes, uncovered.
  6. Sprinkle with salt and pepper.
  7. Garnish soup with green onions and carrots.
