1 lb  fresh green beans
1 tbsp  fresh lime juice
1 tbsp  olive oil
1 tsp  fresh ginger root
1 pinch  kosher salt
1 pinch  black pepper
  1. Boil beans in water for 3 minutes. Strain and rinse with cold water. Take out 1/4 cup of the beans and save for another time. Combine the remaining beans with lime juice, olive oil and ginger. Sprinkle with salt and pepper. Serve chilled.
