2 cup  cold water
2 each  medium garlic cloves
8 oz  soft tofu
3 tbsp  fresh lemon juice
1 1/2 tbsp  olive oil
0 3/4 tsp  sea salt
  1. Boil water in a small pot. Mix in garlic and cook 10 minutes. Strain into a colander.
  2. Arrange tofu on multiple layers of paper towels and cover with more paper towels. Let rest for 10 minutes.
  3. Using a food processor or blender puree garlic, tofu, lemon juice, olive oil, and salt until smooth.
