3 cup  fresh okra
4 oz  pitted calamata olives
1 tbsp  grated lemon rind
0 1/4 cup  fresh lemon juice
2 tbsp  extra virgin olive oil
0 1/2 tsp  kosher salt
0 1/2 tsp  hot red pepper flakes
2 each  medium garlic cloves
2 each  bay leaves
2 pinch  fresh thyme
  1. Add ingredients to a large resealable plastic bag.
  2. Secure tightly and chill for 48 to 72 hours, flipping bag a few times.
  3. Pour bag into a colander and drain, throwing out liquid.
