1 each  Chicken, broiler/fryer, whole, with skin, raw
1 tbsp  fresh oregano
1 tbsp  chopped parsley
1 tbsp  fresh cilantro
1 tsp  kosher salt
1 tsp  ground cumin
2 tsp  unsalted butter
0 3/4 tsp  black pepper
0 1/2 tsp  paprika
2 each  medium garlic cloves
1 each  Oranges, all types, fresh, small, 2 3/8"
1 each  small onions
1 each  cooking spray
  1. Preheat oven to 375 degrees F.
  2. Take out and throw away giblets, neck, and any extra fat.
  3. Separate skin from meat of chicken by inserting fingers between and gently pushing.
  4. Mix together oregano, parsley, cilantro, salt, cumin, butter, pepper, and paprika.
  5. Massage mixture between skin and meat and on the outer surface of the chicken.
  6. Lay garlic, orange, and onion quarters inside the body cavity.
  7. Secure ends of legs with twine and tuck wings under bird.
  8. Place chicken, breast side in a cooking spray coated roasting pan.
  9. Cook for 1 hour and 20 minutes, a meat thermometer should read at least 165 degrees F.
  10. Let rest 10 minutes. Remove skin, garlic, oranges, and onions.
  11. Squeeze orange juice over chicken.
