2 each  raw egg yolks
0 1/2 cup  Cream, whipping, heavy
0 1/4 cup  Butter, unsalted
2 tbsp  cooking sherry
0 1/2 tsp  salt
1 pinch  ground cayenne (red pepper)
1 pinch  ground nutmeg
0 3/4 lb  Lobster, cooked, FDA
  1. In a small bowl, whisk together egg yolks and heavy cream until well blended. Set aside.
  2. Melt butter in a saucepan over low heat. Stir in the egg yolk mixture and sherry. Cook, stirring constantly until the mixture thickens. Do not boil.
  3. Remove from heat, and season with salt, cayenne, and nutmeg.
  4. Add lobster.
  5. Return pan to low heat, and cook gently until heated through.
