8 each  medium garlic cloves
1 cup  white wine
1 lb  large scallops
1 tbsp  orange juice
1/2 tsp  fresh lemon juice
2 tbsp  olive oil
1 pinch  salt
1 pinch  black pepper
6 cup  salad greens
1 each  medium red bell peppers
1 each  medium oranges
1 tbsp  fresh basil
  1. Peel garlic cloves and in small saucepan, combine garlic and white wine. Bring to boil. Add scallops and reduce heat to medium-high heat. Cook 3-5 minutes, stirring often, until scallops are tender and opaque.
  2. With slotted spoon, remove scallops from pan and set aside in bowl.
  3. Return sauce to heat. Simmer 10-15 minutes to reduce remaining garlic and wine to about 1/4 cup. Strain and set aside to cool. Discard solids.
  4. In small bowl, whisk orange juice, lemon juice, and olive oil.
  5. Add 1/4 cup reduced wine liquid, salt, and pepper.
  6. Add 1/2 dressing to scallops and toss.
  7. Peel and cut orange into 1/4" slices. Slice red bell pepper into 1/4" rings.
  8. Arrange greens on large platter with pepper rings and orange sections.
  9. Ladle scallops into center of serving platter and drizzle remaining dressing over salad.
  10. Top with basil and serve immediately.
