2 tbsp  olive oil
1 tsp  ground cumin
2 tbsp  fresh cilantro
1 each  medium limes
1 pinch  salt and pepper
2 each  boneless skinless chicken breasts
1 each  small zucchini
1 each  medium onions
1 each  large red bell peppers
10 pinch  fresh cherry tomatoes
  1. In a shallow dish, mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper.
  2. Add chicken, and mix well.
  3. Cover, and refrigerate for at least one hour.
  4. Preheat grill for high heat.
  5. Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers.
  6. Brush grill with oil, and arrange skewers on hot grate.
  7. Cook for approximately 10 minutes, or until chicken is cooked through, turning to cook evenly.
