2 each  small onions
1 lb  fresh medium mushrooms
8 each  boneless skinless chicken breasts
0 1/2 tsp  salt
0 1/2 tsp  black pepper
0 1/2 tsp  paprika
2 tsp  fresh chives
2 tsp  chopped parsley
0 1/2 cup  low sodium chicken broth
0 1/4 cup  brandy
2 tbsp  dijon mustard
Directions
  1. In large skillet, over medium heat, sauté onions and mushrooms.
  2. Remove onion/mushroom mixture from skillet and set aside. Add chicken breasts to skillet.
  3. Return skillet to heat and sauté 4 minutes. Turn over and add mushroom mixture on top.
  4. In small bowl, mix salt, pepper, paprika, chives, and parsley. Sprinkle spices over chicken.
  5. In medium bowl, combine broth, brandy, and mustard.
  6. Pour over chicken, reduce heat to low and simmer for 20 to 25 minutes or until chicken is cooked.
