3 tbsp  extra virgin olive oil
1 tbsp  minced onion
1 each  medium garlic cloves
1 tsp  ground thyme
0 1/2 tsp  dried rosemary
0 1/4 tsp  ground sage
0 1/4 tsp  dried marjoram
0 1/2 tsp  salt
0 1/2 tsp  black pepper
0.125 tsp  hot pepper sauce
4 each  whole chicken breast, raw
1 1/2 tbsp  chopped parsley
  1. Preheat oven to 425 degrees F.
  2. In a bowl, prepare the basting sauce by combining olive oil, onion, garlic, thyme, rosemary, sage, marjoram, salt, pepper, and hot pepper sauce.
  3. Turn chicken breasts in sauce to coat thoroughly.
  4. Place skin side up in a shallow baking dish. Cover.
  5. Roast at 425 degrees F, basting occasionally with pan drippings, for about 35 to 45 minutes.
  6. Remove to warm platter, spoon pan juices over, and sprinkle with fresh parsley.
