24 oz  medium zucchini
2 cup  low fat cheddar cheese, shredded
0.3333 cup  low sodium shredded mozzarella
1 1/2 cup  light mayonnaise
0 1/4 cup  fat free sour cream
1 cup  chopped pecans
0 1/4 cup  red bell peppers, sliced
1 pinch  salt and pepper
  1. In a medium bowl, mix together zucchini, cheddar cheese, mozzarella cheese, mayonnaise, sour cream, pecans, red bell pepper, salt and pepper.
  2. Chill in the refrigerator at least 1 hour before serving.
