5 oz  fresh baby spinach
0 1/2 cup  plain nonfat yogurt
0 3/4 cup  Cheese, ricotta, fat free
0 1/2 tsp  crushed garlic
2 tbsp  chopped parsley
2 tbsp  grated Parmesan cheese
  1. Rinse spinach under cold water, shake off excess water, and place in large pot. Do not add additional water. Cook until wilted, about 5 minutes, stirring often. Drain and squeeze out excess water.
  2. In food processor fitted with steel blade, place cooked spinach, yogurt, ricotta, garlic, parsley, and Parmesan cheese. Pulse until mixed.
