1 1/2 cup  white whole wheat flour
1 1/2 tbsp  SPLENDA┬« Sugar Blend for Baking
0.3333 cup  Margarine, hard
1 1/2 tbsp  fresh lemon juice
1 tbsp  cold water
1 each  cooking spray
1 each  fat & sugar free vanilla instant pudding mix
2 cup  whole milk
3 each  medium peaches
1 cup  fresh sliced strawberries
0.3333 cup  sugar free apricot jam
Directions
  1. Preheat oven to 400 degrees F.
  2. Set aside 1 tablespoon flour.
  3. In a large bowl, place remaining flour and sugar, stirring to combine. Cut in margarine until mixture resembles coarse meal.
  4. Sprinkle lemon juice and ice water, 1 tablespoon at a time, over surface of flour mixture. Toss with a fork until mixture forms a soft dough.
  5. Turn dough out onto wok surface sprinkled with reserved 1 tablespoon flour; knead lightly 4 or 5 times. Roll dough into a 10-inch circle.
  6. Fit dough into a 9-inch flan dish or pieplate coated with cooking spray, fold edges under, and flute. Prick bottom of pastry with a fork.
  7. Bake for 12 minutes or until lightly browned. Cool completely on a wire rack.
  8. Prepare pudding mix according to package directions using skim milk; spoon into prepared crust. Arrange peaches and strawberries over pudding.
  9. Place apricot jam in a small saucepan, place over medium heat until melted.
  10. Brush melted apricot spread over peaches and strawberries.
  11. Cover and refrigerate at least 2 hours or until thoroughly chilled.
