4 each  catfish fillets
1 1/2 tbsp  honey
1 1/2 tbsp  dijon mustard
1 1/2 tbsp  fresh lemon juice
0 1/4 cup  Cornmeal, white, whole grain
0 1/2 tsp  ground thyme
1 pinch  salt and pepper
Directions
  1. Preheat the oven to 375 degrees F. Rinse the fillets and pat dry; set aside.
  2. In a shallow bowl, whisk together the honey, mustard, and lemon juice.
  3. In a separate shallow bowl, combine the cornmeal with the thyme and a few shakes of salt and pepper.
  4. Dip each fillet into the honey-mustard sauce and then dredge it in the cornmeal mixture to coat both sides evenly.
  5. Place the fillets in a lightly oiled baking pan and bake, uncovered, for 20 to 30 minutes, or until thoroughly hot and tender.
