1 lb  swordfish fillets
2 tbsp  hoisin sauce
2 tbsp  light yellow miso paste
2 tbsp  Wine, sake/saki, Japanese
1 1/2 tsp  fresh ginger root
2 tbsp  rice vinegar
1 each  scallions
1 cup  red bell peppers, sliced
  1. Preheat the oven to 350 degrees F.
  2. Rinse the fish, place it, skin side down, in a lightly oiled baking dish and set it aside. In a bowl, whisk together the hoisin sauce, miso, sake, ginger, and rice vinegar.
  3. Pour the sauce evenly over the fish, cover, and bake for 25 to 30 minutes, until the fish flakes easily with a fork.
  4. Serve garnished with scallions and red pepper strips.
