Ingredients Directions
  1. Combine in a small bowl the chicken broth, peanut butter, soy sauce and ginger with wire whisk. Reserve 3 tablespoons sauce for noodles.
  2. Cut chicken lengthwise into 1-inch wide strips. Thread chicken onto 8 (6- to 8-inch) bamboo skewers. Spray large skillet with cooking spray. Add chicken; cook over medium-high heat 3 to 4 minutes on each side or until chicken is no longer pink inside. Brush chicken with remaining peanut sauce. Cook 1 minute to heat sauce. Remove from skillet; keep warm.
  3. In a large saucepan, bring 2 cups water and margarine to a boil. Slowly stir in pasta, vegetables and seasonings from package. Return to a boil. Reduce heat to medium-low. Gently boil 6 to 7 minutes or until pasta is tender.
  4. Stir in reserved 3 tablespoons peanut sauce. Let stand 3 minutes before serving. Serve chicken skewers with pasta.
