2 tbsp  fresh lemon juice
2 tbsp  cold water
1 tsp  dijon mustard
0 1/4 tsp  kosher salt
2 oz  silken tofu
1 each  medium garlic cloves
2 tbsp  extra virgin olive oil
1 tbsp  chopped parsley
12 cup  romaine lettuce
3 tbsp  grated Parmesan cheese
  1. In food processor fitted with steel blade or blender, purée lemon juice, water, mustard, salt, tofu, and garlic until smooth.
  2. While still blending, drizzle oil into mixture and continue to purée.
  3. In large salad bowl, add romaine lettuce and parsley. Drizzle dressing over lettuce. Toss.
  4. Top with Parmesan cheese and serve.
