Ingredients Directions
  1. Preheat a conventional or toaster oven to 300 degrees F.
  2. Stack the tortillas together, then wrap and carefully seal them in aluminum foil and set aside.
  3. In a large skillet, saute the chiles, garlic, onions, and cumin in the oil for 5 minutes. Add the bell peppers and salsa, cover, and cook on medium heat for 5 minutes. While the vegetables cook, bake the tortillas for about 10 minutes, until soft and pliable and heated through.
  4. Meanwhile, add the seitan to the skillet and cook, uncovered, until the vegetables are tender, about 3 to 4 minutes more.
  5. Place 1/6 of the filling on each warmed tortilla and roll it up. Serve immediately with lettuce and tomatoes and additional salsa, if desired.
