2 cup  fresh chopped onion
1 tbsp  minced garlic
2 tsp  olive oil
1 cup  chopped carrots
1 cup  fresh chopped celery
1 cup  chopped red bell peppers
1 tsp  oregano leaves
0 1/4 tsp  ground thyme
1 tsp  dried basil
1 tsp  dried marjoram
1 pinch  ground cayenne (red pepper)
3 cup  chopped tomato
15 oz  red kidney beans, canned and drained
1 tbsp  dijon mustard
1 tbsp  brown sugar
1 each  Okra, frozen, 10oz package
1 pinch  salt and pepper
1 tsp  chopped parsley
  1. Combine the onions, garlic, and olive oil in a soup pot; saute on medium heat for about 8 minutes, stirring occasionally, until the onions are softened.
  2. Add the carrots, celery, bell peppers, oregano, thyme, basil, marjoram, and cayenne. Turn heat to low, cover and cook for another 5 to 10 minutes, stirring to prevent sticking.
  3. When the vegetables are just tender, stir in the tomatoes, kidney beans, mustard, brown sugar, and okra, if desired. Simmer gently for 5 to 10 minutes.
  4. Add salt and pepper to taste and serve topped with parsley or scallions.
