2 cup  fresh chopped onion
2 each  medium garlic cloves
1 tbsp  olive oil
1 tbsp  ground cumin
1 tbsp  ground coriander
1 cup  salsa
2 each  medium red bell peppers
3 cup  canned black beans
3 cup  canned whole peeled tomatoes
2 cup  frozen sweet corn kernels
1 pinch  salt
1 pinch  tabasco sauce
0 1/4 cup  fresh cilantro
Directions
  1. In a soup pot, heat the olive oil and cook the onions and garlic on medium heat, stirring frequently, for about 5 minutes.
  2. Add the cumin and coriander and stir on high heat for a minute. Stir in the salsa and bell peppers, lower the heat, cover, and simmer for about 5 minutes, stirring occasionally.
  3. Add the black beans and tomatoes and simmer for 10 minutes.
  4. Add the corn and continue to cook for 10 minutes.
  5. Add salt and Tabasco to taste. Stir in the cilantro, if desired.
