2 lb  round tip roast, lean
0 1/4 cup  low sodium soy sauce
0 1/4 cup  fresh cilantro
2 tbsp  oregano leaves
3 each  medium garlic cloves
0 1/2 oz  black pepper
1 each  cilantro sprigs
  1. Preheat grill to medium-high.
  2. Slice off and throw away any excess fat from the beef. Cut 1 inch long and 1/2 inch deep pockets into top and bottom of roast, 1 inch apart from each other.
  3. Whisk together soy sauce, cilantro, oregano, garlic, and pepper.
  4. Arrange roast in a shallow baking dish and pour soy sauce marinade into slits and over top.
  5. Lay roast on the grill and shut lid. Cook 20 to 25 minutes, flipping once or until preferred degree of doneness; a meat thermometer should read at least 125 degrees F.
  6. Move meat to a cutting board and let stand 5 minutes. Slice diagonally across the grain into thin pieces. Top with cilantro sprigs.
