12 oz  arugula
8 oz  fresh cherry tomatoes
1 pinch  salt
2 1/2 lb  top sirloin steak, lean
3 tbsp  olive oil
0 1/2 oz  balsamic vinegar
1 pinch  black pepper
2 oz  grated Parmesan cheese
  1. Preheat grill to medium.
  2. Rinse and dry beef. Trim any excess fat and rub with olive oil.
  3. Place steak on grill, cover and cook 6 - 8 minutes per side or until internal temperature reaches 125°F. Remove from heat, let stand 5 minutes.
  4. In a large bowl whisk together 1 tablespoon each olive oil and vinegar. Place arugula in bowl and toss. Transfer arugula to serving platter.
  5. Slice steak into 1/4" thick pieces, season with salt and pepper. Place on top of arugula. Garnish with shaved parmesan cheese and cherry tomatoes.
  6. Season with 2 additional tablespoons olive oil, if desired, before serving.
