3 cup  sliced white onion
1 1/2 cup  chopped leeks
0 1/2 cup  shallots, chopped
1 tbsp  margarine
1 tsp  sugar
4 oz  fresh mushroom slices
6 1/2 cup  low sodium vegetable broth
1 pinch  salt
1 pinch  black pepper
  1. In large pot, melt margarine and sauté onions, leeks, and shallots. Cook covered, over medium-low heat for 15 minutes.
  2. Add sugar and cook, uncovered, for 10 minutes or until onion is lightly browned. Mix in mushrooms and cook over medium heat 5 minutes or until soft.
  3. Add broth and let boil. Lower heat and simmer 15 minutes. Sprinkle with salt and pepper.
