2 cups  shredded carrots
2 each  Oranges, navels, fresh, 2 7/8"
2 tbsp  fresh lemon juice
1 tbsp  honey
0 1/2 tsp  ground cinnamon
  1. In large bowl, place shredded carrots and set aside.
  2. Cut oranges in half. With grapefruit knife, remove pulp from each section of orange. Add to carrots.
  3. Squeeze juice from orange peels into bowl.
  4. In small bowl, combine lemon juice, honey, and cinnamon. Pour over carrots and oranges. Toss to coat.
  5. Allow salad to rest at room temperature at least 10 minutes. Serve.
