2 each  medium cucumber
0 1/4 cup  cider vinegar
2 tbsp  sugar
0 1/2 tsp  salt
0 1/2 tsp  dry mustard
1 pinch  black pepper
  1. Slice the cucumbers crosswise into 1/8 to 1/4 inch rounds.
  2. Combine the vinegar, sugar, salt, and mustard in a serving bowl. Toss with the sliced cucumbers and add pepper to taste.
  3. Serve immediately or refrigerate until ready to use.
