0 1/2 cup  red wine vinegar
2 each  medium shallots
1 tbsp  dijon mustard
1 pinch  salt and pepper
1 tsp  fresh thyme
1 1/2 cup  extra virgin olive oil
  1. Peel and finely dice the shallot and place in a bowl with the vinegar and salt. Let stand for 15 minutes to bring out the sweetness of the shallots.
  2. Add the mustard and thyme. Using a whisk or a food processor, add the oil in a steady stream. Adjust the seasonings with salt and pepper.
