1 1/2 lb  turkey breast strips, uncooked
2 each  large red bell peppers
16 oz  fresh pineapple
0 1/2 cup  rice vinegar
0 1/4 cup  pickled ginger
2 tsp  garlic cloves, chopped
0 1/2 tsp  black pepper
1 each  cooking spray
  1. Soak 6 wooden skewers in water 20 minutes.
  2. Preheat oven to 400°F.
  3. Wash and pat dry turkey tenders, cut into bite-size pieces, and place in resealable plastic food storage bag.
  4. Slice bell peppers into quarters, and then into bite-size chunks.
  5. Place in bag then add pineapple, vinegar, pickled ginger, garlic, and black peper to bag with turkey.
  6. Seal bag, turn several times to coat all ingredients.
  7. Chill 20 minutes.
  8. Spray baking pan with nonstick cooking spray.
  9. Assemble 6 skewers by threading pieces of red pepper, turkey, ginger slice, and pineapple on each.
  10. Place in pan, cover with aluminum foil, and bake 20 to 25 minutes.
