6 each  Bacon, cured, lower sodium
2 each  medium celery stalk
1 each  medium onions
0 1/4 cup  butter
2 tbsp  white all purpose flour
24 oz  clam juice
1 quart  fat free half and half
4 cup  Clams, mixed species, raw
1 pinch  white pepper
  1. In a medium skillet over medium heat, cook bacon, celery and onion until onion is translucent. Remove from heat and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour to form a roux, cooking until bubbly.
  3. Whisk in clam juice, until smooth. Stir in onion mixture. Pour in half and half, stirring constantly.
  4. Stir in clams, reduce heat and simmer 30 minutes.
  5. Season with pepper and serve.
