6 oz  unsalted tomato paste
0 1/2 cup  red wine
0 1/2 cup  cold water
1 tsp  minced garlic
0 1/2 tsp  ground basil leaves
0 1/2 tsp  oregano leaves
0 1/4 tsp  salt
12 oz  ground beef (5% fat)
12 oz  ground turkey
1 cup  bread crumbs
0 1/2 cup  chopped zucchini
1 each  Eggs, whole
  1. Preheat oven to 350°F.
  2. Combine tomato paste, wine, water, garlic, basil, oregano, and salt in small saucepan.
  3. Bring to boil. Reduce heat to low. Simmer, uncovered for 15 minutes.
  4. Remove from heat and set aside.
  5. In large bowl, combine beef, turkey, bread crumbs, zucchini, egg substitute, and half of tomato mixture. Mix well.
  6. Shape into loaf in ungreased 9" x 5" x 3" inch loaf pan.
  7. Bake 45 minutes.
  8. Discard any drippings.
  9. Spread remaining tomato mixture on top of meat. Bake for additional 20-25 minutes until internal temperature reaches 165°F..
  10. Transfer meatloaf to serving platter. Let cool 10 minutes. Cut into 8 slices and serve.
