1 quart  low fat buttermilk
0 1/2 cup  shallots, chopped
2 tbsp  minced garlic
2 tbsp  kosher salt
2 tbsp  sugar
1 tbsp  ground cumin
1 tsp  black pepper
6 each  chicken thighs
6 each  chicken drumsticks, raw
  1. In a large bowl, whisk together buttermilk, shallot, garlic, salt substitute, sugar, cumin, and pepper.
  2. Wash and dry chicken. Cut off any fat from surface. Dunk chicken into buttermilk, making sure to fully coat both sides. Wrap and place in refrigerator for at least 4 hours, or up to 1 day.
  3. Preheat grill to medium.
  4. Take chicken out of buttermilk ad let excess drip off.
  5. Arrange chicken on a grill and shut lid. Grill, 20 to 30 minutes, flipping a few times, chicken should be cooked through. Serve hot or cold.
