12 oz  firm tofu
0 1/2 cup  chopped red bell peppers
0 1/2 cup  fresh chopped celery
2 tbsp  fresh chopped green onion
2 tbsp  chopped parsley
1 tbsp  fresh dill weed
1 tsp  dijon mustard
1 tsp  fresh lemon juice
0.3333 cup  light mayonnaise
1 pinch  black pepper
1 each  Spinach, fresh, bunch
0 1/2 each  fresh tomatoes
Directions
  1. Mix together the tofu, peppers, celery (optional), scallions, dill, mustard, lemon juice, mayonnaise, and black pepper until well combined.
  2. Serve with spinach or lettuce and tomato slices.
