3 each  medium apples
1 each  cooking spray
1 cup  white all purpose flour
1 tsp  low sodium baking powder
0 1/4 tsp  salt
0.3333 cup  Margarine, 80% fat, unsalted
0.3333 cup  sweetener (sugar substitute)
0 1/2 tsp  grated lemon rind
0 1/2 tsp  vanilla extract
1 each  eggs
0 1/2 cup  fat free milk
Directions
  1. Arrange apples in the bottom of a cooking spray coated 8-inch square baking pan. Set aside.
  2. Combine the flour, baking powder, and salt. Set aside.
  3. In a medium bowl, combine the margarine, sugar substitute, rind, and vanilla. With an electric mixer, beat the ingredients together until well blended. Add the egg and then continue to beat the mixture until it is fluffy.
  4. Add the flour mixture to the creamed mixture alternately with the milk, beginning and ending with the flour mixture.
  5. Preheat your oven to 375 degrees F and then spoon the batter into the prepared pan with the apples in it.
  6. Bake for 40-45 minutes, or until a wooden toothpick inserted into the center comes out clean.
  7. Cut into 6 equal squares and serve hot.
