1 each  medium shallots
1 tsp  fresh thyme
0 1/2 cup  vinegar
0 1/4 cup  red wine vinegar
0 1/2 cup  extra virgin olive oil
0 1/2 tsp  sugar
0 1/2 tsp  salt and pepper
  1. Chop the shallots coarsely and place in a food processor. Add the thyme and mince.
  2. Add both the raspberry and red wine vinegar and blend. Slowly add the olive oil and continue to blend.
  3. Add the sugar, salt and pepper and adjust the seasonings according to taste.
