3 lb  Mussels, blue, raw, medium
0.3333 cup  fresh lime juice
15 floz  canned coconut milk
0.3333 cup  white wine
1 1/2 tbsp  red curry paste
1 1/2 tbsp  minced garlic
1 tbsp  fish sauce
1 1/2 tbsp  sugar
2 cup  fresh cilantro
3 each  fresh plum tomatoes
  1. In an 8-quart soup pot, combine lime juice, coconut milk, wine, curry paste, garlic, fish sauce, and sugar over high heat. Bring to a boil, then lower heat and stir for about 2 minutes.
  2. Add mussels, tossing to combine. Cook the mussels, covered, until mussels are opened, about 5 to 8 minutes.
  3. Add the cilantro and tomatoes. Serve in a wide, shallow bowl.
