2 lb  large raw shrimp
2 cup  fresh cilantro
0.3333 cup  dry roasted unsalted peanuts
1 each  medium garlic cloves
1 each  whole jalapeno pepper
3 each  scallions
1 tbsp  fish sauce
0.3333 cup  fresh lime juice
0 1/4 cup  peanut oil
  1. In a food processor, combine the cilantro, peanuts, garlic, jalapeno, and scallions. Process to a rough paste. Add the fish sauce and lime juice; process until the mixture begins to turn creamy.
  2. With the motor running, slowly pour in the oil; process until combined. Chill before serving.
