1.3333 cup  fresh chopped onion
0.6667 cup  fresh chopped celery
0 1/4 cup  salted butter
3 1/2 cup  Stock, chicken, prepared from recipe
2 cup  Rice, wild, dry
1 tsp  salt
0 1/2 tsp  black pepper
1 cup  Cherries, tart, montmorency, dried
0 1/2 each  dried apricots
0 1/2 cup  chopped walnuts
1 tbsp  fresh lemon juice
1 pinch  fresh rosemary
1 pinch  fresh thyme
  1. In a large sauté pan, cook onion and celery in butter until soft. Add the chicken stock, wild rice, salt, and pepper. Cover pan and simmer for 30 minutes.
  2. Add dried fruit to the pan and simmer another 15 minutes. Add nuts before serving.
