0.3333 cup  canola oil
0.6667 cup  maple syrup
1 each  eggs
1 cup  Pumpkin, cooked, drained, mashed
1.6667 cup  Flour, white, unbleached, enriched
1 1/2 tsp  baking soda
0 1/2 tsp  salt
0 1/2 tsp  nutmeg, ground
0 1/2 tsp  ground cinnamon
0 1/4 tsp  ground cloves
  1. Preheat the oven to 375 degrees F. Grease or line a muffin pan.
  2. In a blender or with a hand mixer, thoroughly blend the oil, syrup, egg and pumpkin in a medium sized bowl. Set aside.
  3. In another bowl, sift the flour, baking soda, salt, and spices. Add to the blended mixture and stir gently to form a thick batter.
  4. Immediately spread the batter into the prepared muffin tins.
  5. Bake in the oven for 20 minutes or until a tester comes out clean. Cool in the pan 10 minutes, then turn out onto a rack.
