2 tsp  olive oil
2 each  medium carrots
2 each  Celery, fresh, stalk, medium, FDA
4 each  fresh leeks
2 each  medium garlic cloves
1 1/2 cup  low fat unsalted chicken broth
7 1/2 oz  canned salmon
2 tbsp  capers, drained
0 1/2 tsp  dried dill weed
0 1/4 tsp  black pepper
4 oz  Pasta, angel hair, dry, package
8 cup  fresh baby spinach
1 tsp  fresh lemon peel
1 tbsp  fresh lemon juice
Directions
  1. Heat the oil over medium heat in a large, deep nonstick pan. Sauté carrots, celery, leeks, and garlic until tender, about 4 minutes.
  2. Stir in the broth, salmon, capers, dill, and pepper, raise heat to medium high and bring to a simmer, stir often.
  3. Add in the pasta and stir. Place the spinach leaves over the pasta (spinach will steam as pasta cooks).
  4. Lower heat, cover, and simmer until pasta is cooked, about 5-6 minutes.
  5. Stir in lemon zest and juice, cook for another 2 minutes, stirring to mix spinach with pasta; serve.
