1 tsp  fresh jalapeno chili peppers
2 tbsp  Marmalade, orange
1 each  medium limes
0 1/4 tsp  salt
16 oz  whole salmon
1 each  medium tomatoes
0 1/2 tsp  ground cumin
0.125 tsp  black pepper
3 cup  fresh broccoli florets
24 oz  fresh cauliflower florets
4 each  Corn, sweet, fresh, cob, kernels, medium, FDA
Directions
  1. In a blender, puree the jalapeno, marmalade, lime juice, and salt. Spread on salmon then place blender aside, do not clean it.
  2. Place one oven rack on top third of oven and one on bottom third, then preheat to 400 degrees F.
  3. Process the tomato, cumin, and pepper in the blender, place in a bowl; add in the broccoli, cauliflower, and corn.
  4. Cut parchment paper into ovals about 20 inches long and 14 inches wide. With the long sides at the top and bottom, fold each sheet in half from left to right, then unfold.
  5. Place 1 fillet approximately 1 1/2 inches to the right of the fold; add 1/4 of the vegetables around the top, bottom, and right side of the fillet.
  6. Fold the left side over to cover, and fold all the way around to completely seal the packets; repeat with the other 3 fillets and parchment.
  7. Use 2 baking sheets and place 2 salmon packets on each. Place one baking sheet on top rack of oven and the other on the bottom; bake for 8 minutes. Switch positions of the sheets place top one on bottom and bottom on top), bake another 8 minutes before checking to see if they are done.
  8. Using extreme caution when opening packet. To check if done vegetables should be tender and fish should flake easily with a fork. If they are not done, reseal and place back in oven for 1-2 minutes before checking again.
  9. Serve right in packet on an individual dish and remind everyone to open with caution to avoid steam burns.
