Ingredients Directions
  1. Saute the onions, potatoes, and paprika in the oil, stirring constantly, for about 5 minutes, until the onions have softened.
  2. Add the tomatoes and thyme and simmer for 3 or 4 minutes. Add the vegetable broth and simmer gently for about 10 minutes, until the potatoes are tender.
  3. Ladle into bowls and serve hot, with warm bread.
