1 each  yellow onion
1 each  medium bell peppers
4 each  fresh portobello mushroom
0 1/4 pinch  salt
0 1/4 tsp  black pepper
2 cup  Mashed Potatoes, real, premium, prepared, FS
2 tbsp  red wine vinegar
3 oz  crumbled blue cheese
1 each  cooking spray
  1. Preheat the oven to 425 degrees F.
  2. Situate the onions and bell peppers on a nonstick baking pan and coat with cooking spray. Spray the mushrooms with cooking spray and place on top.
  3. Season with salt and pepper and bake for 15 minutes.
  4. Cook the potatoes in accordance with the directions on the package.
  5. Take the pan out of the oven and move the onions and peppers to one side of the pan.
  6. Pour 1 1/2 teaspoons vinegar over the mushrooms. Dust 3 tablespoons of cheese over each mushroom.
  7. Put 1/2 cup mashed potatoes on top of the mushrooms then evenly place the onions and peppers over the potatoes.
  8. Bake for 5 minutes or until cheese has slightly melted.
