0 1/2 cup  margarine
1 cup  Baking Chips, chocolate, semi sweet
0 3/4 cup  sugar
1 each  eggs
1 tsp  vanilla extract
1 tsp  instant coffee granules
0 1/2 cup  whole wheat flour
0 1/2 cup  mashed sweet potatoes
2 tbsp  unsweetened cocoa powder
1 tsp  baking powder
0 1/4 tsp  salt
0 1/2 cup  chopped walnuts
Directions
  1. Preheat 350 degrees F. Line an 8-inch square pan with aluminum foil and set aside.
  2. Heat margarine and chocolate chips in a saucepan over medium heat until melted. Remove from heat.
  3. Add sugar and beat until smooth. Mix in egg, coffee, and vanilla.
  4. Add flour, sweet potato, cocoa powder, baking powder, and salt. Mix to combine.
  5. Fold in walnuts. Spread mixture in prepared pan.
  6. Bake 25 minutes or until a toothpick inserted in center comes out clean. Cool completely on rack before cutting.
