1 lb  sweet potatoes
2 tbsp  Margarine, 80% fat, unsalted
3 tbsp  packed dark brown sugar
0 1/2 tsp  grated orange peel
0 1/4 tsp  vanilla extract
0.125 tsp  ground nutmeg
0 1/2 tsp  ground cumin
0 1/4 tsp  salt
0 1/4 tsp  black pepper
4 each  boneless pork chops
1 each  cooking spray
  1. Set a collapsible steamer basket in a saucepan. Pour in 2 cups of water, add the potatoes, bring to a boil, cover, and steam for 10 minutes.
  2. Mix the margarine, brown sugar, orange rind, vanilla, and nutmeg in a bowl.
  3. Heat a skillet over medium heat and spray with cooking spray.
  4. Season pork with cumin, salt, pepper, and paprika.
  5. Cook the pork for 5 minutes then flip over and cook the other side for 4 minutes.
  6. Once the potatoes are done, drain and mix with the margarine.
