Ingredients Directions
  1. In a large pot, combine the onions, garlic, potatoes, celery, and water. Bring to a boil, reduce the heat, and then simmer for 10 minutes.
  2. Add the carrots and continue to simmer for 10 more minutes.
  3. Add the cauliflower, dill, lemon juice, mustard, and caraway seeds and simmer for 15 to 20 minutes longer.
  4. In a blender or food processor, puree the soup with the buttermilk, working in batches. Add salt to taste.
  5. Add the soup back to the pot and gently reheat. Serve topped with chopped scallions.
