8 oz  dry penne pasta
2 cup  fresh cherry tomatoes
4 oz  low moisture, part skim mozzarella cheese
0 1/2 cup  chopped parsley
0.3333 cup  capers
2 tbsp  extra virgin olive oil
2 tsp  dried basil
1 each  medium garlic cloves
0 3/4 tsp  kosher salt
0 1/4 tsp  hot red pepper flakes
1 each  medium lemons
  1. Cook the pasta in according to the directions on the package.
  2. Mix the tomatoes, cheese, parsley leaves, capers, olive oil, basil leaves, garlic clove, salt, and red pepper flakes in a bowl.
  3. Grate 1/2 teaspoon lemon rind and mix in, then squeeze the juice on top.
  4. Drain pasta and rinse under cold water.
  5. Toss pasta with the tomato mixture and serve.
